Pulled Pork Quesadilla
The other day, I made Pulled Pork in my new slow cooker. The extended family was gathering to go see a show, so I had everyone over for a quick and easy meal. Cole Slaw, Alton Brown style, and fresh buns. Delish.
I had a serving or two of pulled pork left, and no bread to eat it with. Whatever shall I do?! I sandwiched a few slices of cheese and a half cup of cold pulled pork between two home-made tortillas. Grilled it low and slow on a cast iron skillet, about 4 minutes each side.
The sour cream was too much, but the half and half Siracha/BBQ sauce was a perfect pairing.
